The problem is that genetically modifying these seeds can cause unknown
results. There could be health risks caused by tinkering with things that
cannot be forseen. There's a lot of critisism about testing GM crops in
fields as there's no way to stop the modified crops spreading - either by
pollenating (sp?) other normal crops or being spread by animals/whatever.

Monsanto are doing just this.
